A addition to the ArcGIS 9.2 Tutorials Library, ESRI has posted a whitepaper covering ArcGIS Desktop Tips And Shortcuts. This is quite a handy document actually. It was just yesterday when I was working with ArcMap and had hundreds of raster images added which made it really slow that I had to make use of some of the shortcuts to get things done.
